Spicy Chicken Kabsa

Kabsa is a popular Arabic rice dish originated from Saudi Arabia.. And it is available in all GCC countries , sometimes the name may differ. From childhood my taste buds are used to this yummy rice dish as my dad made it on special occasions . It was really nice to watch my dad cooking Kabsa( i.e., may be his favorite food in the whole world πŸ˜ƒ)!!spicy chicken kabsa
But now, myself and hubby prefer more spicy food and we wanted to eat a spicy Kabsa ! So this weekend me and my dad decided to try a spicy version of Kabsa.. ( normally Kabsa is not that spicy)!spicy chicken kabsaSo here is the Kabsa recipe, which my dad and myself made.. And the result was too delicious.. All loved it like anything πŸ²πŸ—πŸ˜‹! i hope all will love this One Pot dish!!

Ingredients:spicy chicken kabsa

  • Chicken-2 full chickens with skin( each cut to 4 pcs )
  • Kabsa rice / Basmati Rice- 2.5 cups
  • Water-5.5 cups( hot water )
  • Saudi Kabsa masala-6 big spoon + 3 spoon
  • Red chilly powder-2 spoon
  • Oil-4 spoon
  • Ghee-1 spoon
  • Onion-2 or 3 ( sliced )
  • Tomatoes-4 ( chopped )
  • Cilantro leaves-a big handful ( finely chopped )
  • Bay leaves-2
  • Whole Garam masala-as shown in the image(cloves, cardamom , cinnamon, cumin seeds, fennel seeds, pepper )
  • Crushed Ginger & Garlic -2 spoon
  • Green chilly-4 ( cut to half )
  • Big chillies-4
  • Lemon juice-2 spoon
  • Dried lemon-3 ( 2 whole & 1 crushed )

( NB: if you don’t have Kabsa powder, mix these spices and powder it! The ingredients are- turmeric, red chilly, coriander, black pepper,cloves,cinnamon,cumin,black cardamom, fennel seeds, ginger)

How to make:

1)first soak the washed rice in water ( not hot or warm water) for at least 1/2 an hour or so.. This will make the rice cook easily..

2)make a marinade with lemon juice, 3 spoon Kabsa powder, chilly powder and salt.. Apply this to the chicken and then apply the leftovers to the big chillies after making a slit on them.. And keep it aside..

3) now let’s heat a big dish in which we are going to make the Kabsa..( if it is big enough, there would be room to stir nicely !!)
Once the dish is hot , add oil and ghee.. Then add the whole Garam Masala to it and sautΓ© well.. Next is onion.. Stir nicely for 3-4 mins in medium flame..

4)now add the marinated chicken pieces and don’t stir much.. Let the chicken be cooked in this oil with whole Garam masala spices..I I will suggest to keep the flame medium and cook both the side of the chicken well!! At least the chicken should turn brown..spicy chicken kabsa recipe

5)once the chicken is brown, add small green chillies, big marinated chillies and crushed ginger -garlic . Please don’t over stir things.. Gently mix them up.. And the big green chillies should be cooked well.. Cook this for at least 3-4 minutes..

6)now add chopped tomatoes along with salt and mix with the rest of the ingredients and cook with the lid closed for 5-6 mins.. chicken kabsa step by step recipe

7)now the tomatoes might be Ina gravy kind of consistency..then add the hot water and add the rest of Kabsa powder and 2 whole dried lemon, cilantro leaves.. Add more salt if needed..mix well without crushing the chicken pieces.. Let this be cooked in high flame for 4-5 minutes..kabsa recipe step by step

8)when the water reaches boiling point reduce the flame and start adding the rice without any water content.. Mix it gently with the Kabsa masala water and keep the flame medium.. Check for salt.. If needed add more Kabsa powder and salt..and now add the crushed lemon..

9) once the water content reduces , make the flame to sim and close it with the lid..
Now cook this in extremely low flame for at least 12-15 mins..After that off the flame.. But do not open the lid for another 10-15 minutes.. Let the rice get cooked thoroughly!!spicy chicken kabsa
