Happy Thanksgiving to all my friends out there..I hope everyone njoyed the day well with lots of love and yummy food..so after every celebration there would be some kind of leftovers in our refrigerator🤔!! Isn’t it?? So here’s a recipe to use up almost what you have as leftovers.. And this recipe can be done with any kind of bread like pita, Tortillas etc…and leftover turkey or chicken..
KOTHU POROTTA is a Kerala dish made out of left over Paratas/ Porotta ( i.e., a kind of bread Made out of All purpose flour)!! There are some restaurants in my place which is famous for their Kothu Porotta..
You can decide the ingredients as per wish.. Here I limited the amount of spice , because of my little one.. If it is too hot, she won’t eat..
So here’s the recipe:
Kerala Porotta/ chapathi or Tortilla-6 ( cut to small pcs)
Bell Peppers( red,green,yellow)-1/2 ( cut to small pcs )
Green peas-1/2 bowl( cooked )
Onion-1 ( sliced )
Hot sauce-as per taste
Red chilly powder- 1/2 spoon
Coriander powder-2 spoon
Turmeric powder-1/2 teaspoon
Garam masala powder-1/2 spoon
Cumin powder-1/4 spoon
Salt-as per need
Olive oil-3 spoon
Ginger – Garlic paste-1 spoon
How to make:
1)heat a wok or big pan..pour oil and add all the veggie stuff other than peas in the pan when oil is hot..stir well after adding enough salt.. Close with a lid and cook for 4-5 mins on medium flame..
2)now stir it nicely and add all the spices along with ginger and garlic paste .. Cook well.. Now move the veggie stuff to a side of the wok and make some space to scramble the eggs.. Add the eggs along with some salt and scramble it.. Later mix it along with all the veggies..
3)now let’s add the cooked peas , hot sauce and ketchup to this and stir well.. Add more salt or spice as per taste of your family..
4)now we are adding the final and key ingredient-Porotta’s or bread pcs.. Stir it and mix well with the whole masala .. Cook it for 8-10 mins on low flame with the kids closed and stir occasionally..
So our Kothu Porotta is ready.. Serve it hot with your favorite sauce…
And we love to eat Kothu Porotta for breakfast or supper!! 😋
