Ragda Patties(Indian Street Food):
Ragda Patties is a Famous Indian street food…its really a fantastic feel to eat all this yummy food at the busy crowded streets…as told in a previous post ,I had this first time from Delhi..and me and Hubby used to eat it at least 2 times a day:-)! it was that yummm…
yesterday there was some cooked green peas left in the refrigerator..so i decided to prepare Ragda Patties..it was my first attempt…everyone loved it …me too:-)
here’s the simple recipe:
for Ragda( for the curry ):
green peas -1/2 cup(cooked along with chilly powder,turmeric powder and salt )
Chilly powder-1 1/2 spoon
Dried Funugreek leaves/ kasoori methi-a pinch
Chaat masala powder-1/2 teaspoon
garam masala powder-1/2 teaspoon
tamarind -1 smal lemon sized soaked in water
( can add more masala powders if needed )
Onion-1( finely chopped )
Tomato-1 ( finely chopped )
garlic-5-8 cloves(pasted )
For patties( aloo tikki):
carrot-2 small ( cooked )
Chilly powder-1/4 teaspoon
chaat masala-a pinch
coriander powder-1/2 teaspoon
Garam masala powder-1/4 teaspoon
Turmeric powder-a pinch
Oil-for shallow frying
For final seasoning:
Bhel -as per needed
Onion-2 ( finely chopped )
tomato-2( finely chopped )
lemon-cut to half
How to make:
1)first let’s prepare the ragda/ green peas curry..heat a wok,add oil..
2)add the onion and garlic paste.. Saute for few mins..to this add the tomato and masala powders..
3)mix the tamarind paste well with sugar and sieve it out.. Extract the sweet tamarind paste..and keep it aside!!
4)cook this well and add cooked green peas along with water..
5)now add the tamarind paste and blend well..slightly mash the green peas along with curry to get a smooth thick consistency..off the flame when done!!
6)now let’s prepare the aloo tikki..mash the potatoes and carrot well..
7)now add all the masala powders to this and mix well..
8)now add the bread crumbs and mix well..
9)now make small balls out of this and flatten well..
10)now shallow fry the patties in a pan with oil till golden brown..
11)now let’s do the final step..pour some curry on the serving plate..
12)place the aloo tikki / patties on this curry and sprinkle a handful of bhel and onion,tomato generously.?
13)now squeeze lemon and serve ?!!
so our home made ragda patties is ready!! If you want serve along with imli chutney & green chutney..
