“Thairu Vada”/ Urad Dal ( white lentil )Fritters in Yogurt curry:
Yesterday we made typical Kerala Style “Thairu Vada” for ifthar as yogurt is really good keep our body cool..It was another favorite dish of my family.. This is an appetizer we prefer to eat from Vegetarian Restaurants..the fritters along with the yogurt thadka( spluttered) is awesome?..
But sorry for not capturing all the images while preparing?!! Because yesterday i was in a hurry to finish my works before Ifthar..sorry gyz..
urad dal-1 glass( soaked in water for 1 hr and then grinded without water content) add some water to keep it moist..
Shallots- a handful( sliced thin)
green chillies-2( finely chopped )
curry leaves-1 small bunch(Finely chopped)
black pepper-1 teaspoon( as whole)
ginger-1 pc( finely chopped )
vegetable oil- for deep frying
For seasoning/ tadka:
Mustard seeds-1 teaspoon
Fenugreek seeds-a pinch
Cilantro leaves-a small bunch( chopped)
Coconut oil-1 1/2 spoon
carrot-1 ( grated )
Yogurt-1 big tin (thick yogurt )
Asafetida powder-a pinch
How to make Fritters/uzhunnu vada:
1)mix all the ingredients other than oil together well to thick mixture along with salt..
2)now take small ball out of it and make to doughnut shape with a whole inside..( spread some oil on your hands to make the shaping process easier)
3)deep fry the vada/ fritters till golden brown..and remove excess oil from it…
4)now lets prepare the yogurt tadka..heat a wok.. Add oil and splutter the fenugreek seeds and then mustard seeds..
5)soon add the red chillies,salt and asafetida powder.. Later add the cilantro leaves..and low the flame and add yogurt to it..mix well and soon add the vada’s / fritters..off the flame soon, otherwise the curry turns worst !!
6)now serve hot with some grated carrot sprinkled all above it.. The more you keep the fritters in the yogurt , the more tastier it becomes..??
