“Unnakaya”/ plantain filled with Walnut-Cashew -Coconut Mixture!!
This is another evening snack which my dear hubby asks me to prepare often.. ??!! It’s a traditional plantain sweet recipe all the way from Kerala.. The fillings absolutely depends on our taste buds?!!
So each time I try to keep changing the filling..so today I tried it with Walnut-Cashew along with coconut..
- Plantain-4 ( not so ripen)
- Sugar-3 spoon
- Ghee-3 spoon
- Walnut-as per taste( finely chopped )
- Cashew nuts-as per taste( finely chopped )
- Coconut-1/2 cup( grated)
- Olive oil-1 teaspoon
How to make:
1) first of all lets boil the plantains cut to pcs along with the skin in enough water..
2)off the flame when the plantain becomes soft.. Don’t overcook..
Off the flame and drain out the water..
3)now remove the skin and place it on a plate..with help of a wooden spatula or masher, mash the plantain ..
And divide it to needed portions as medium sized balls..
4)now lets prepare the filling..keep a pan on flame.. Add 1 spoon ghee.. Add the nuts and saute well..
5)now add the coconut and mix well.. Saute till become soft and add sugar..off the flame !!
6) now lets start filling the mixture to the plantain balls..
7)take one ball with some olive oil spread in your hands..make the balls flat as shown in the image..
8)keep 1 spoon filling inside this and close it from both the sides..press well in order to secure the filling inside with the outer plantain covering strong..
Try to attain the shape as shown in the image..?
9)now finish off all the rest of plantain balls..
10)now heat a pan and add ghee..saute each plantain snacks well till they become golden brown.. No need to deep fry or cook too much..
